Dietary Department

Marc Walters is the Director of Dietary Services. He oversees food production for our 165-bed hospital and staff of over 900. The dietary department also serves visitors and caters special hospital and community events during the year.

Nutrition plays an important role in your treatment and recovery. Our Registered Dietitians work closely with physicians to provide for all patients’ nutritional care during their stay. Dietitians follow the nutritional status of patients, oversee the therapeutic diets and provide nutrition education. 


ECRMC dietitians, experts in nutritional support, assess the nutritional status of our patients to identify those who are at nutritional risk. They develop nutritional care plans with physicians. Dietitians will visit patients during meal rounds to assure that patients are eating well. Before discharge, a dietitian will educate patients and families about special diets prescribed by their physician(s). Registered dietitians hold Bachelor’s degrees in nutrition and national board certification.


Patients at ECRMC are allowed to make a selection from a menu that is designed specifically for them, based on the dietary recommendations made by their physician. Menus include foods that represent our area’s diverse culture, from machaca burritos and caldo de pollo , to macaroni and cheese. Fresh salsa is served every morning with breakfast. Vegetarians can choose from a special selection of entrees, and children have their own child menus. Dietary aides assist our patients with menu selection and deliver meals with utmost courtesy. 


Food service for visitors and employees in the newly renovated  deli is open 7 days a week for dining and is located in the center of the ground floor of the hospital. Visitors and employees can choose hot entrées or fresh salads and sandwiches. The hospital has two outdoor patios for visitor and employee dining. 


Our Deli is open from 7:00am to 7:30pm with chilled sandwiches, salads, desserts and other items
Hot Breakfast Buffet - 8:00am to 10:00pm
Hot Lunch Buffet - 11:00pm (12:00pm on weekends) to 2:00pm
Hot Dinner  Buffet - 6:00pm to 7:30pm


Vending machines are available in two designated areas. These offer snacks, cold foods and beverages 24 hours a day. These are located near  both outside patios.
